For 20 years now, Kenduskeag resident Cloyd Boubier has been selling fiddleheads on the Bar Harbor Road in Ellsworth. At Boubier’s roadside stand last weekend, the coiled ostrich fern leaves were fetching $4.50 per pound. He says sales have been slow. He observed, “a lot of people are out of work and buying just what they’ve got to have.” To cook, thoroughly wash fiddleheads several times. Then cook them at a steady boil in lightly salted water for 10 minutes.
